BED & BREAKFAST QUICHE
(Even Cowboys eat quiche at Honeycomb Suites!)

Yield- one 9" Quiche- enough for 6-8 servings
 1-partially baked 9" pie shell  
 1 ¼ T. Flour  ¾ c. Milk
 ¼ tsp. Salt  5 or 6 Eggs
 ¼ tsp. Chili Powder  1 c. Ham, finely diced
 ½ tsp. Granulated Garlic  2 c. Cheddar Cheese, grated
 ½ tsp. Black Pepper  (or 2 c. Mixed grated cheeses )
 2 T. Parmesan Cheese  
 1 ¼ T. Parsley  

While the pie shell is par-baking in the oven, stir together all the dry ingredients in a medium bowl, with a French whip. Add milk & mix. Then add the eggs & mix thoroughly. Set aside. In pie shell, sprinkle diced ham, then cheeses. Then, stir & very carefully pour the milk-egg mixture over the ham & cheese. Bake in 350 degree oven for about 40 minutes. Ovens vary, so check quiche at about 30 minutes. Quiche should be golden brown on top & very puffy-(don't worry, it will settle as it cools). Let Quiche stand for about 10 minutes before cutting & serving. Or, cool completely, wrap & refrigerate for up to 10 days. This quiche re-heats very well in the microwave.

Don't be afraid to try new combinations- Cooked breakfast sausage & grated Swiss cheese or bacon & cheddar are very good. Add mushrooms, bell pepper, etc. Whatever your family likes. With this basic recipe, it's easy to be creative. Eat what you like & like what you eat.
